Caterpillar & bunny mooncake cookies

N's creation

Yummy Fruitty Nutty Mooncake

N's creation 1 for E, 1 for herself :)

I baked these yummy nutty and fruitti mooncakes, vis a vis the conventional mooncakes filled with overly sweet and oily lotus paste. These are absolutely great. In my view, they can be classified as health food.  I filled them up with : walnuts, almonds, pine nuts, melon seeds, cranberries, raisins, sesame seeds and I "glued" them together using some homemade apple jam (little added sugar).

With some extra dough, N had great fun with it.  She moulded them into a bunny and an ant. Use your imagination on which is which :) N was very sweet. She gave the catepillar looking ant to E. Both packed the lovely creatures to school and the friends absolutely adored them :) for they could only have piggies (commercially available).

The photos are upside down as I am not able to rotate them, somehow....

Jelly Mooncakes.....

Lantern Festival is just weeks away.

I have been making lots of Jelly Mooncake. Only managed to capture a few flavours here:

- Organic Soy Milk Jelly Mooncake filled with pandan "egg yolk" ( I like this one best cos it looks like its counterpart -snow skin mooncake)

- Beetroot Fresh fruit Jelly Mooncake (the mooncakes were gone before I could snap a picture:)

- Red Bean Jelly Mooncake

Jelly mooncake

First attempt in making jelly mooncake. It was quite an experience. I used carrot as the yolk and orange as the fillings. It turned out fine. These were just meant for home consumption upon the kids' request to have some ice cold jelly.

I also made a batch of traditional baked mooncakes and little piggies but I forgot to snap some pictures...well, gotta wait for another year then :)

Moon cake 3

My give-away mooncakes to relatives and friends.

I filled them with :

red bean paste or mung bean paste with melon seeds, almond flakes

red bean paste or mung bean paste with sesame seeds

red bean paste or mung bean paste with feraro rocher

The winner was none other than the Rocher! Crispy on the inside and soft on the outside. :)

All were pleased to receive them as they were all made from scratch. No articifial colouring or preservatives, low in sugar and fats. Happy Mid Autumn Festival to all :)

Snowkin Mooncake 2

Second attempt at snowskin mooncake. My parents loved them as they were of the right sweetness and they were as fresh as they could get :). From steaming to eating, all up within 2 hours. I will be giving some away to friends who like mooncakes :) These are easy to make, relative to shaping and cutting fondant!

Pandan snowkin mooncake

First attempt at snowskin mooncake. Pretty easy. This was made from fresh pandan juice and hence its green appearance. Nic and I decided to fill it with red bean paste and almond flakes. Not a bad idea at all :)

As we rolled, we ate (the skin). It was chewy and sweet, just like gummy bears. heehee :) Upon completion of our tasks, we actually grew tired of eating the end product haha :)
