Now you see it, now you dont!
E and N have been great supporters of my bakes. I did 2 batches of durian tarts. While waiting for the second tray of tarts to cool before piping the fresh durian cream, I went to deliver some to a neighbour who had expressed interest in tasting them.
Guess what? when I got back, E had swallowed 4 empty tart shells and helped himself to 5 durian tarts. I could still see crumbs dropping out from his mouth as he talked....heehee :)
Luckily, I had kept some away in a box earlier. Otherise, N would be sulking away....

Eclair and Macaron Cream Puff

Puff pastry recipe
E's favourite "japanese biscuits"
Water dough
250g flour
25g butter
2.5g salt
10g sugar
10g milk powder
138ml cold water
Oil dough
150g butter
25g flour
Method
1. Mix all ingredients for water dough (add water gradually)
2. Knead till a smooth dough is formed.
3. Rest in freezer for 10 min.
4, Mix ingredients for oil dough.
5. Rest in freezer for 10 min.
6. Roll out water dough into a rectangle,place oil dough in the middle and wrap it up by folding the 4 sides.
7. Roll out the dough and fold 4 sides and rest in freezer for 5 min
8. Repeat step 7 twice.
9. Shape as desired.
10. Bake at 230C for 5 min, reduce to 200C for another 10min/

Japanese pastry
My little boy's favourite Japanese pastry :). The ones sold are much larger in size and are difficult to be carried around and so I made a miniature version. They were very well received at home especially by the 2 Mr Hong.

Kaya Puff
Nic loves kaya.
However, due to its high sugar and saturated fat contents, I don't encourage it at home. On second thought, if I could make it a healthier version and she gets to enjoy it, why not? I discovered a way of making kaya without having to stand and steam for 2 long hours at the stove. I did mine in 30 minutes and it is equally yum with half the usual sugar and saturated fats :). Let me know if you are keen to try it out too :)
In the baking were some yummy kaya puffs. Nic had 4 pieces within a day!
You see how small my oven is? Hence, sometimes my output is insufficient to meet demand but I refuse to change it because this is my very first oven! It is my baby!
