Beautiful Castella








To me, baking Castella needs tons of patience. This is the only tip in getting it right. You just need to keep on beating the egg mixture till it is very very thick in order to achieve the superfine texture. I dont have any wooden bake pans as suggested by many. I just use an ordinary bake pan. It still works!




Absolutely oil free and chemical free. Many Castella recipes I have read contain oil or butter and baking powder. This to me, defeats the purpose of baking a healthy castella which is a very simple sponge cake using no chemicals/butter/oil at all.

Belated post





At the request of E, I baked a Dino birthday cake for him, which turned out to be not-so-dino :(. The baby Dinos were more attractive than the mummy Dino ya? Last minute changes to the deco as I couldnt whip up the fresh cream for some unknown reasons. I had to cover up the body with choc chips. Also added some almond flakes on the back as spikes (not visible here)..




Well, at least the kids were impressed :) They wanted to eat the baby Dinos too! Though edible, I did not serve them as they were just lumps of sugar.

Happy Birthday N!





Now, this was the better version of the trial :). I was happy with it, at least.


It was a "rainbow" birthday cake, as requested by Nic. Well, not exactly 7 colours but just 5.


I layered the cake into 5. Carrot juice for orange, Beetroot juice for pink, Pandan juice for green, Blue Pea Flower juice for blue and Chocolate Powder for brown. The cake was sandwiched with fresh raspberry cream and topped up with more fresh fruits!


Also made the popular Chocolate Ganache Mud Cake, absolutely butter free :) and the "premium" chocolate pieaces :)


and many more.......


A tiring day but it brought lots of happiness :) Thank God, my auntie was here. She helped to prepare the savory dishes and the Mango pudding, while Lawrence/Rose took care of the BBQ stuff. We had premium steak, tiger prawns, Hallibut fish fillet, Scallop, Sakura Chicken fillet, corn, salad, fresh fruits, etc etc and the most dreaded sausages.


Nic's classmate 1 remarked " Auntie, I love these macarons....and the cookies too..hmm...so tasty...."


Classmate 2 " Auntie, did you bake this cake ? Wow! It's so beautiful!"


Classmate 3 " Auntie, you are so talented, may be you can open a bakery....I will go there everyday!"

Trial birthday cake for Nic








Nic's semi completed trial birthday cake before her big day! The fruits were missing, the pearls were missing..and many more......I wasnt quite happy with the piping and due to limitation in colouring, I wasnt able to create a more vibrant color combination. I only use natural coloring :) The pink flowers were created using beetroot and the greenish blue with blue pea flowers.


Perhaps, I should re-create the deco totally. Layers of fruit jelly?...or stick some macarons on it?...or tie it up with a bunch of chocolate sticks? or....

Aiyu CheeseCake - Fusion!




Been a long time since I last made a cheesecake, the real rich cheesecake, not the light and fluffy version.


I was tossing with the idea of topping it up with fresh orange juice solidified with gelatin and some fresh strawberries but I had no strawberries in stock. I did have some freshly made "ai-yu" jelly though and so popped the idea of Aiyu Cheese Cake.



I broke up some Aiyu jelly into small chunks, added some lemon juice and honey and gelatin. Off they went to the freezer together with the cheesecake for 15 minutes for immediate cooling.



Daaa..daa......here we have, our very own version of Aiyu Cheesecake :)....East meets West fusion cheesecake :)



The kids couldnt have enough of it!
