Been a long time since I last made a cheesecake, the real rich cheesecake, not the light and fluffy version.
I was tossing with the idea of topping it up with fresh orange juice solidified with gelatin and some fresh strawberries but I had no strawberries in stock. I did have some freshly made "ai-yu" jelly though and so popped the idea of Aiyu Cheese Cake.
I broke up some Aiyu jelly into small chunks, added some lemon juice and honey and gelatin. Off they went to the freezer together with the cheesecake for 15 minutes for immediate cooling.
Daaa..daa......here we have, our very own version of Aiyu Cheesecake :)....East meets West fusion cheesecake :)
The kids couldnt have enough of it!
