Home-made Mayonnaise Recipe

I really love this homemade Mayo!

Totally fresh and free from preservatives/emulsifier/artificial flavoring.

Here goes the easy recipe:

1 fresh egg yolk
15g sugar (to adjust to your liking)

4 tbsp oil

a pinch of salt
1/2 tablespoon lemon juice

1. Whisk egg yolk and sugar till mixture turns pale yellow.
2. Dribble oil into above, keep the mixer going at all times.
3. Add salt and lemon juice
4. whisk till mixture thickens.
5. There you have your very own fresh Mayo! Please consume within a day or so. Keep refrigerated.

If you spread the mayo on the buns to make the typical meat floss buns, the above recipe should be good enough for 10 to 15 buns depending on the size of the buns.
