Been a long time since I made the first Mac. I am not a fan of Mac as these little devils are definitely overloaded with sugar AND more sugar.
I received a text message one day.
" Auntie, I changed my mind. I don't want to bake blueberry muffins. I want to bake Macarons. Is it ok?"
Oops! Been such a long time and I thought I needed to re-visit these little sugary cookies before I invite Alina over for a bake session and we had these over the weekend. I gave away half of the bake as we couldnt possibly chew them all up without getting a toothache! :)
Just for your information, some commercially available Mac may not taste as sweet but it is absolutely deceiving. The sweetness is simply "suppressed" by other elements be it, lemon juice or bitter cocoa powder. I read somewhere that a fully loaded Mac has 200 calaries! So, stay away if you are watching the scale:)
In case you are keen to try it out too, here goes the recipe:
1. 50g icing sugar
2. 38g almond meal
3. pinch of spices (optional)
4. 1 egg white (33g to 37g)
5. 30g caster sugar
a. Blend ingredients 1, 2, 3.
b. Whisk egg white till foamy. Add sugar and whisk till stiff.
c. Mix a into b. Please do not overmix ( ie. the batter turns very runny)
d. Pipe desired shapes onto parchment paper.
e. Rap the baking pan a few times.
f. Leave to dry for 20minutes at room temperature.
g. Bake at 160C for 15 minutes.
h. Let cool completely before removing from parchment paper.
i. Fill it with any fillings of your choice.
j. Enjoy :)
