Fresh durian cake





When my parents were here last month, I baked my mom a durian cake - early celebration of her birthday. The vanilla sponge was layered and coated with fresh durian flesh and fresh cream with freshly roasted almond flakes as toppings.


E shunned the cake while N devoured 3 slices. It showed a vast difference in their preference. Overall, thumbs up from Mum and Dad :)

Just one question, how much cream do u need to cover the whole cake plus the layering? Cause with 1 pkt of cream cheese cum 1 pkt of whipping cream still not sufficient for me to cover my cake, lol!

In fact, I tried to minimise the use of fresh cream (high in fats)...I am a health freak by nature lol! For this cake, I think I used about 180ml to 200ml of whipping cream and no cheese at all.

Do you use the pre-whipped cream or do you whip from scratch? I did the latter.

I usually whip frm scratch too... hrm, 200mls is approximately 1 pkt, I reckon u must be very good at frosting... mine only manage to cover the top!T_T

I don't mind to hv lots of whipping cream, lol, jst love those rich creamy daily!;p

I guess whipping it till closer to stiff peak helps. It doesnt melt so easily. I like the way your kids are being involved in the process...they are so into it... :)

May I know how much durian do u need for the fresh cream? Do u blend the durian with the whipping cream just like the mousse? thks !

Hi Amy,

I just bought a "box" of durian...you know those pre-packed ones? Remove the seeds and mash it up in the blender. Depending on its original sweetness, you may add a little sugar if you dont like the bitterness. I spread the durian paste directly onto the cake. Thereafter, I did the usual creaming.

If you like the taste of fresh cream, you may also spread a layer in between.

Quite easy to do. Try it. The durian taste was pretty strong as I used the entire box of durian :).
